Is there any specific reason why House Bolton has chosen a flayed man as their banner?

Are the Bolton's known for flaying men?

I know that Ramsay does it, but I don't remember any mention of any other Bolton (living or ancestor) who was flaying people.

Answer

In the Age of Heroes, thousands of years before the books/TV series, the Boltons used to flay their enemies (including several Stark lords). They accepted Stark sovereignty about a thousand years ago, and agreed to stop the practice, although it is rumoured that they continue in secret. See the ASoIaF Wiki for more details.
